Mango Avocado Smash Tacos with Quick Pickled Veggies

This week we are bringing back an old favorite using the beautiful produce headed your way! What a fun, colorful bag – so much fresh, crisp produce that I couldn’t wait to get into the kitchen and create! Using the Purple Cabbage, Cilantro, Avocados, Radishes, and Microgreens from this week’s Variety Bag – I am excited to share this quick, beautiful, delicious and nutritious dinner with you!

As there are several recipes involved in this dish, let’s get started with the Quick Pickled Veggies.

1/2 head Red Cabbage – finely shredded

1 Bunch Radishes – cleaned, cut in half and cut into thin slices

2-4 Jalapenos – cut into thin round slices

1 handful Cilantro

1/2 cup Water

1/2 cup Sugar

1/2 cup Rice Vinegar

1/2 cup Apple Cider Vinegar

Bring the water, vinegar and sugar mixture to a boil over medium heat. Stir until sugar dissolves and remove from heat. This doubles nicely if you wish to pickle more veggies than called for. Allow to cool at room temperature. Grab a glass jar or two and begin adding layers of the prepped veggies. Once you reach the top, pour the cooled vinegar mixture over the top until all the produce is covered. Tighten the lid and refrigerate for at least 30 minutes. These delicious veggies will last in a refrigerator for up to two weeks – if they last that long. These pretty gems are perfect atop tacos, salads, sandwiches and bowls. They add flavor and beauty to anything they touch! Make it your own by adding your favorites on hand. Shaved Carrots, Red Onion, Bell Peppers, Cucumbers – whatever you fancy!

Now that the Quick Pickled Veggies are prepped and marinating, it is time to make the Mango Avocado Smash! Using the Jalapenos, Mango and Cilantro from the Variety Bag – this is a delicious combination of a simple, fresh Tomatillo Salsa mixed with Avocados and Mangoes which transforms into a delicious dip or topping!

4 Tomatillos – husked

1-2 Jalapenos – seeds removed

1 handful Cilantro

1/2 Sweet Onion

1-2 Limes – juiced and zested

Maldon Salt

2 – 4 Avocados – seeded

1 Mango – small diced

Grab a blender and add the tomatillos, jalapeno(s) depending on desired heat, cilantro, onion and lime juice. Pulse until well combined. Salt to taste. Add fresh avocado and 1/2 cup tomatillo salsa mixture to a pretty bowl. Toss to combine, yet leave chunky in consistency. Add the diced mango and incorporate. Top with a pinch of Maldon Salt, your favorite Urban Greens Microgreens and perhaps some Pomegranate Arils and this delicious dip is complete!

Now it is time to put all of this together to make the most delicious tacos, ever!

Urban Greens Microgreens

Add a generous amount of Mango Avocado Smash to each tortilla. Top with pickled veggies and microgreens and ENJOY every single bite! And then make some more! These are SO good. Hope you love them as much as I do!
