Spinach Pear and Pomegranate Salad with Honey Balsamic Dressing

The first thing that came to mind when looking at the contents for this week was one of my all-time favorite salad combinations! A Spinach Pear Pomegranate Salad with Honey Balsamic Dressing. This can be put together in no time at all and is beyond satisfying. It tastes like fall in a salad bowl. I hope you give this one a try! And please remember to make it your own. If you don’t like blue cheese, substitute your favorite cheese in its place. If you don’t have any pomegranate seeds handy – dried cherries or cranberries work perfectly. If you don’t fancy nuts, simply omit them – or add one which you like. I love to see how you adapt these recipes – so please do share. I always love hearing form y’all!

Spinach Pear and Pomegranate Salad with Honey Balsamic Dressing

Ingredients

1 bundle spinach – stems removed

2 ripe pears – cored and sliced

1 small red onion – finely sliced

1/2 cup pomegranate seeds

1/4 cup crumbled blue cheese

1/4 cup candied pecans

1/2 cup olive oil

1/4 cup balsamic vinegar

2 tablespoons Dijon mustard

2 tablespoons honey

2 garlic cloves – minced

Salt and pepper to taste

Directions

In a small bowl, whisk together the vinegar, olive oil, honey, mustard, garlic, and salt and pepper to make the dressing. Set aside.

Grab a pretty salad bowl – toss the trimmed spinach with a generous pour of the dressing. Top with crumbled blue cheese and candied pecans.  Next, nicely arrange pears and onion slices in a pretty fashion. Sprinkle the pomegranate seeds on the top. Finish with a generous drizzle of the dressing. ENJOY!
