Late Summer Salad with Citrus Honey Vinaigrette

This week’s bag has some delicious and versatile ingredients which are keeping me happily occupied in the kitchen! First up, using the Lemons, Fresh Thyme, Sweet Corn and Baby Turnips – paired with Queen City Meyer Lemon Oil, Savory Spice Maldon Salt & Aleppo Pepper, Greener Grounds Cherry Tomatoes, Urban Greens Microgreens and Edible Flowers, and Hideout Honey Bees Honey from our SHOP, I am pleased to share my recipe for Late Summer Salad topped off with a super yummy Citrus Honey Vinaigrette. This is the perfect dish for these hot summer nights we have been having as of late – and the dressing, I have a feeling it will become your new favorite! Enjoy!

2 ears of Sweet Corn – shucked

1 bunch Baby Turnips – topped and thinly shaved (I used a mandolin for paper thin slices)

1-2 handfuls Arugula

1 pint Greener Grounds Cherry Tomatoes – halved

Urban Greens Microgreens & Edible Flowers

1/2 cup Queen City Meyer Lemon Oil

1/4 cup Apple Cider Vinegar

1 Lemon – juiced & zested

1/4 cup Hideout Honey Bees Honey

1 tablespoon Dijon Mustard

1 Garlic Clove – minced or pressed

1 tablespoon Thyme leaves

Maldon Salt to taste

Aleppo Pepper to finish

To char the corn, place it in the oven under the broiler. Watching it to make sure it doesn’t burn, turn the corn as kernels begin to char. Repeat until all sides are browned nicely. 15 minutes or so. Once cooled, cut kernels from the cob.

To make the dressing, add the oil, vinegar, lemon juice and zest, honey, Dijon mustard, garlic, thyme and a pinch of salt. Stir well to combine and set aside. Add more salt is desired.

Grab a beautiful salad bowl and begin adding layers of the beautiful prepped produce. Start with a bed of arugula, top with the turnip slices, and tomato halves and then sprinkle a generous amount of the corn. Top with a drizzle of the summery, citrusy dressing and then repeat until all the ingredients are gone.

Finish with a generous amount of your favorite microgreens and edible flower petals. I used Cantaloupe Microgreens, which are my new favorite, and go perfectly with this salad (they will be the Featured Microgreen of the Week next week!). Top with a sprinkle of Aleppo Pepper and another drizzle of the yummy dressing and your Late Summer Salad is complete!
