Southwest Slaw with Tomatillo Ranch

This week’s Variety Bag is so beautiful – truly a rainbow array of fresh goodness! So much inspiration it is hard to stop at just one recipe! Immediately the Tomatillos caught my eye and brought to mind a super delicious salad dressing that pairs beautifully with cabbage for a flavorful slaw. Using the Cilantro (or Oregano), Tomatillos, Lemons and Red Cabbage from the Variety Bag – paired with Savory Spice Capitol Hill Seasoning and Onion & Garlic Table Sprinkle (can sub a Ranch Mix Packet too) alongside Swan Bros. Buttermilk, I am super excited to share my recipe for Southwest Slaw with Tomatillo Ranch. It is a crowd pleaser for certain – and the Tomatillo Ranch will change the way you look at ranch forever! It is SO good that it deserves a permanent place in your refrigerator, as it makes anything taste like southwest heaven!

1 head Red Cabbage – cored and finely shaved

4-5 Carrots – large grate

2 cups cut Corn

5 Green Onions + 2 more for dressing – finely chopped white and green parts

2-3 Tomatillos – roughly chopped

1/4 cup fresh Lemon juice + Zest

1 handful Cilantro – roughly chopped (Can also sub Oregano for a flavorful twist)

1 -2 Jalapenos – seeds removed

2 Garlic cloves – roughly chopped

1/2 cup Mayonnaise or Vegenaise (which I prefer)

1/2 cup Swan Bros Buttermilk (coconut cream can be substituted)

1/2 cup – 1 cup Sour Cream – depending on thickness desired (thick Greek yogurt or plant based yogurt can be subbed here)

1 tablespoon Savory Spice Capitol Hill Seasoning *

1 tablespoon Savory Spice Onion & Garlic Table Sprinkle *

1/2 teaspoon Savory Spice Maldon Salt *

Urban Greens Microgreens and Edible Flowers

*If you don’t have the Savory Spice Seasonings on hand, you can always substitute a packet of Ranch seasoning mix.

Once you have prepped the Red Cabbage, Green Onions (keeping a portion of 2 separate for use in the dressing), Corn and Carrots, add to a pretty bowl and set aside

To make the most delicious dressing ever, add remaining green onions, tomatillos, lemon juice and zest, cilantro (or Oregano), jalapenos, garlic, mayo, buttermilk, sour cream, Savory Spice Blends and Maldon Salt (or Ranch Mix) to a blender. Blend until all ingredients are smooth and incorporated. Your dressing is complete! I always top with more lemon zest and a sprinkle of Aleppo Pepper. You do you and make it your own! Another fun twist on this dressing is to add an avocado to the blender and the dressing transforms into a Green Goddess type Ranch. So delicious! As well, like I mentioned above, in the event you don’t have the Savory Spice Capitol Hill Seasoning and Onion Garlic Sprinkle on hand, you can always sub a Ranch mix packet. However, I urge you to grab these seasonings, as well as the others we sell – they are true game changers, so versatile and full of all natural ingredients – making for tastier, healthier creations in the kitchen!

It is time to finish the slaw. Slowly add the Tomatillo Ranch to the slaw mixture. Mixing to combine as you go. Once you have your desired amount of dressing, top with Urban Greens Microgreens and Edible Flowers and your colorful slaw is ready to be enjoyed!
