Cucumber Papaya Salad with Peanut Dressing

For the Salad

2 cucumbers, spiralized or julienned

½ papaya – peeled and thinly sliced into strips

1-2 jalapenos – thinly sliced lengthwise

Handful of cilantro, roughly chopped

¼ cup peanut dressing* (see below)

Avocado – thinly sliced lengthwise to finish

Sesame Seed mix for garnish

For the Peanut Dressing

¼ cup peanut butter

2 tablespoons tamari or soy sauce

2 tablespoons rice vinegar

1 freshly squeezed lime + zest

1 inch piece ginger – peeled and finely minced

1 garlic clove, minced

2 tablespoons honey

1 teaspoon toasted sesame oil

Directions

Grab a beautiful bowl, add the cucumber noodles, sliced papaya, jalapenos, and cilantro. Spoon in the peanut sauce little by little until the noodles are dressed to your liking. Toss gently to combine. Plate the pretty salad and finish with avocado slices, cilantro, and a few jalapeno slices. Sprinkle with the sesame seed mix. ENJOY!
