Maple Roasted Carrots with Citrus Maple Tahini Drizzle

1 bunch carrots with tops

2 Tbs Maple Syrup

2 Tbsfavorful olive oil

Sea salt

Citrus Maple Tahini Drizzle

1/4 cup Greek Yogurt

1/4 cup tahini

1/4 cup water

1 Tbs fresh squeezed lemon juice

1 Tbs Maple Syrup

Sea salt

Fresh herbs to garnish



Preheat oven to 425F, line a baking sheet with parchment.

Scrub carrots and remove most of the tops allowing about 3” to remain. Whisk together maple syrup and olive oil and toss to coat carrots.

Place on baking sheet, being careful not to overcrowd – which encourages crispy caramelized edges. Season to taste with sea salt and roast for 30 minutes, turning halfway through.

While the carrots are roasting…mix together the ingredients for the Citrus Maple Tahini Dressing. Set aside to rest at room temperature.

When the carrots are finished and nicely caramelized, remove them from the oven and arrange them on your prettiest platter. Drizzle generously with the tahini dressing. Sprinkle with some fresh herbs and ENJOY!
