Cranberries and Thanksgiving go hand-in-hand, but here’s a spin on Cranberries that can be used far beyond Turkey Day. Cranberry Jalapeño Relish can be enjoyed in so many ways!Straight up with Blue Corn chips, served over Brie or Cream Cheese and enjoyed with crackers. Ingredients
3 cups fresh cranberries- rinsed and drained
2-3 green onions
2-4 jalapenos (depending on the spice level desired) – cored and seeded
1/2 cup brown sugar
1/4 cup fresh cilantro – or more if desired
2 tablespoons fresh-squeezed lemon juice
Instructions
Rinse, drain, and pick over cranberries. Place the cranberries in a food processor – pulse until finely chopped but not mushy. Set aside.
Place green onions, jalapenos, and cilantro in food processor – pulse until finely chopped.
Place chopped cranberries and onion, jalapeno and cilantro mix in a bowl; mix together with brown sugar and lemon juice. Can be enjoyed immediately because the temptation is real. If you have stronger will power than myself, cover and refrigerate for a few hours to let flavors develop.
